Preparation:

Yields: 8 servings
Ingredients:
For the Brisket:
• 1 whole brisket roast (about 4 to 5 lbs.), trimmed
• 1 pound of Pancetta bacon
• 4 tablespoons of chipotle spice rub
For the Sauce:
• 1 cup reserved pan drippings
• 1 cup diced white onion
• ½ cup apple cider vinegar
• ¼ cup brown sugar
• 1 cup beef stock or broth
• ½ cup chipotle barbecue sauce
Directions:
1. Position rack in the middle of the oven and preheat to 275°F.
2. Season the brisket with chipotle rub, poke holes into the meat and rub the seasoning evenly on all areas. Add a layer of half the bacon on a roasting pan and place the brisket on top, fat-side down. Cover the brisket with the remaining bacon and tuck in the edges under. Cover with foil and set aside.
3. Bake it in the oven for 4 hours. Remove pan from the oven and turn off heat. Remove the bacon and drain pan drippings. Turn the brisket upside down and cover with foil. Return the brisket in the oven and let it sit for 1 hour.
4. Finely chop the bacon and place it on a saucepan over medium-high heat. Cook for about 5 minutes, or until the fat has been rendered. Stir in the onion and sauté until soft and translucent. Add in the vinegar and sugar, reduce to low heat and simmer until it has reduced in half.
5. Strain the pan drippings and add into the saucepan together with the remaining ingredients. Cook on medium heat for about 10 minutes, or until the mixture has thickened.
6. Brush brisket with 1 cup prepared sauce and switch the oven into broiler setup. Broil for about 15 to 20 minutes or until the top is crisp and lightly browned. Remove from the oven and let it rest for about 10 minutes before slicing.
7. Thinly slice against the grain and serve with the remaining sauce on a sauce bowl.
