ROSEMARY AND GARLIC RUBBED PORK LOIN

Rosemary Pork Loin
Preparation:

Cooking Time: 25 minutes
Yields: 4 servings

Ingredients:
• 1 pork tenderloin (about 1 to 1 ½ pounds), sliver skin removed and excess fat trimmed
• 2 tablespoons of extra-virgin olive oil

For the Spice Rub:
• 1 teaspoon seasoned salt
• 1 teaspoon garlic powder
• 1 teaspoon dried rosemary
• ½ teaspoon black pepper
• 1 teaspoon mixed Italian herbs

Directions:
1. Preheat an oven to 400°F and position rack in the middle.

2. Combine together all spices in a small bowl and mix until well combined. Set aside.

3. Pat dry pork loin and brush 1 tablespoon of olive oil on all sides. Season with spice rub and spread evenly on all areas and gently massage into the meat.

4. In a large oven-safe skillet or pan, apply medium-high heat and add the remaining oil. Once the oil is hot, sear both sides of the meat for about 5 to 6 minutes, or until evenly browned.

5. Bake it in the oven for 15 minutes. Flip to cook the other side and cook for another 5 minutes, or until the meat is thoroughly cooked. It is done when a meat thermometer inserted on the thickest part registers 150°F.

6. Remove from the oven, transfer to a wire rack and let it rest for about 10 minutes before slicing.

7. Slice the meat into thin rounds, transfer to a serving plate and serve immediately.
