BAKED DUCK EGGS

Baked Duck Eggs
Preparation:

Cooking Time: 15 minutes
Yields: 4 servings

Ingredients:
• 1 tablespoon of clarified butter
• 1 shallot, chopped
• ½ cup diced Prosciutto ham
• ¼ cup crème fraîche
• Salt and black pepper, to taste
• 2 tablespoons of crushed croutons
• 4 fresh duck eggs
• Garlic toasted baguette slices, for serving
• Crispy onion rings, for serving

Directions:
1. Preheat an oven to 160°F.

2. Add the clarified butter in a small pan and apply medium-high heat. Sauté the shallots until soft and tender and stir in the ham and cook for 2 minutes. Remove from the pan and transfer to a plate with paper towels to drain excess fat.

3. Season cream with salt and pepper and stir just to combine.

4. Lightly grease 4 baking ramekins. Portion the ham and shallots mixture into the prepared ramekins and add a layer of crushed croutons. Portion the seasoned cream and carefully break one egg into each ramekin.

5. Place the ramekins on a deep baking dish and pour just enough boiling water to cover the ramekins in half.

6. Bake it in the oven for about 12 to 14 minutes, or until the eggs are set and cooked through. Remove from the oven and serve warm with garlic toasted baguettes and crispy onion rings on top.
